This homestyle meatloaf in a cast iron skillet uses basic ingredients and comes together quickly for an easy weeknight dinner.
What you will need

- old fashioned rolled oats
- catsup
- Lipton onion soup dry mix

Beef
This is homestyle cooking so we don’t shy away from animal fat. I used 80/20 ground beef for this recipe. You can go lean, but I would add a splash of milk to keep your meatloaf from being too dry after cooking. You can also use a combination of ground venison and ground beef for this recipe. Don’t do more than a 50/50 ratio for this step. Venison doesn’t have any fat and you’ll need fat for a juicy and flavorful meatloaf.

Using old fashioned rolled oats will add texture to your meatloaf. I prefer not to use quick oats because we want to limit processed foods in meals as much as possible. Quick oats are more processed than the old fashioned rolled oats.

Lipton onion soup dry mix
I know we are trying to limit processed ingredients in our cooking, but I have not put together a copycat version yet. You can certainly use a copycat homemade mix of your own if you have it. I’m hoping to have one here on my blog very soon. Also I did not add salt, pepper or other seasonings because this soup mix already has enough of that in it.
Mix all the ingredients together
It works best to use your hands for this step. If you prefer to use gloves, make sure they are food grade. You can stop here and form the mix into a loaf and wrap in freezer paper. This freezes really well. When ready to bake just thaw in the refrigerator overnight and continue to bake.

Bake
Bake uncovered in a 350 degree oven for about 1 hour. Make sure all the juices run clear, not pink. The internal temperature should be 160 degrees using an instant-read thermometer.
You can top this meatloaf with catsup if you’d like. Or just top with homemade gravy. Serve with mashed potatoes and green beans. Enjoy!

- Mix all ingredients in a large bowl
- Shape into a loaf in a cast iron skillet
- Bake 350 degrees for about 1 hour or until internal temperature reads 160 degrees
