This is how I prepare the DIY Banana Bread mix

I measure out and add all the dry ingredients of my favorite recipe into a quart size mason jar. I like to use a canning funnel to make it easier.

This is how I prepare Each Jar for Shelf storage

I use this electric mason jar vacuum sealer to create an airtight seal on my jar. I make 3 jars at a time, type and print a label that has the contents of the jar, the ingredients I need to add to make the bread, and the baking instructions. I put the label on the jar and store them in my pantry for up to 4 months. When I use them up, I refill the jar as needed. No need to bring out the recipe each time to make your banana bread because it will be right in front of you on the jar.

Gift Idea

Add a couple jars with bananas, farm fresh eggs, and a jar of home canned applesauce to a basket lined with a tea towel and you have the makings of a great and simple gift. If you think you might give these as gifts, I would put them in mason jars that have smooth sides instead of the ones I’ve used here that have raised, bumpy images. These are for my home pantry so I just used what I had on hand.

Banana Bread

Add the dry ingredients of your favorite banana bread recipe to a mason jar with a label and you have your own dry mix instead of the store bought processed version.

Ingredients

  • 1 3/4 cup flour
  • 1 1/2 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 1/2 cup vegetable oil OR applesauce
  • 1/4 cup + 1T buttermilk OR 1/4 cup plain Greek Yogurt
  • 1 tsp vanilla
  • 1 cup ripened mashed bananas (about 2-3 bananas)

Instructions

  1. Preheat over to 325 degrees and grease 2 loaf pans.
  2. Add dry ingredients to a large bowl and stir to combine.
  3. Add the wet ingredients to the dry ingredients and gently stir until combined.
  4. Pour the batter into 2 greased loaf pans.
  5. Bake 325 degrees for about 1 hour or until done. Insert a knife in the center to check for doneness.
  6. Let cool on a wire rack for about 15 minutes before removing from the pan.

Notes

You can make this in one large pan or into muffins. Just adjust your cooking time.

You can also add chocolate chips or walnuts to this recipe.
